Summer is the season for passion, heat and strong flavours. Us opera lovers know a lot about passion, heat and strong flavours. So for this recipe we are taking it back to one of the most sizzling of opera stories – Pagliacci by Ruggero Leoncavallo – an ultimately tragic story but with plenty of colourful bits, just like this simple family dish. My great-grandmother took inspiration for this recipe from a book and elaborated on it by adding mediterranian flavours such as fresh basil, garden herbs, and “spiked” with pecorino… Indeed it’s name is “Pasta ai profumi dell’orto” or “Pasta with garden herbs”. I would rather dedicate it to Leoncavallo’s masterpiece, where the surprise ingredient is Canio’s troupe upsetting a peasant village with its stories and dramas.
